Midnight Thai Mango Sticky Rice
A classic Thai dessert made with sweet and fragrant midnight mangoes, served with creamy coconut sticky rice.
Ingredients
- β2 Midnight mangoes
- β1/2 cup Medjool dates
- β1 cup Coconut milk
- β1 cup Glutinous ricealso known as sticky rice
- β2 tablespoons Palm sugaror brown sugar
- β1 tablespoon Coconut oil
- βpinch Salt

1. Rinse the glutinous rice thoroughly and soak it in water for at least 4 hours.

2. Drain the water and cook the rice with coconut milk and palm sugar over low heat, stirring constantly.

3. Peel and slice the midnight mangoes into wedges.

4. Heat coconut oil in a pan over medium heat and add the sliced mangoes.

5. Cook for about 2-3 minutes on each side, until the mangoes are caramelized and tender.

6. Serve the sticky rice with the caramelized mangoes on top.
