Australian Midnight Jelly and Custard

- β1 cup Water
- β1 cup Granulated Sugar
- β2 tablespoons Custard Powder
- β2 cups Milk
- β4 Large Egg Yolks
- β1 teaspoon Vanilla Extract

1. In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for 5 minutes to soften.

2. In a medium saucepan, combine the sugar, custard powder, and 1 cup of milk. Whisk until the mixture is smooth and free of lumps.

3. Cook over medium heat, stirring constantly, until the mixture comes to a boil.

4. Remove the saucepan from the heat and add the softened gelatin, stirring until it is fully dissolved.

5. Strain the mixture into a clean bowl to remove any lumps or gelatin particles.

6. In a separate saucepan, combine the remaining 1 cup of milk, egg yolks, and vanilla extract. Whisk until the mixture is smooth.
