Midnight Zha Jiang Mian
A classic Chinese noodle dish, Midnight Zha Jiang Mian is a staple of Chinese cuisine, rich in flavor and texture.
Ingredients
- β2 tablespoons Zha Jiang Saucesee notes
- β1 tablespoon Soy sauceadjust to taste
- β2 tablespoons Peanut oilfor stir-frying
- β200g Noodles (Mian)fresh or dried
- β100g Ground porkor substitute with beef or tofu for a vegetarian option
- β1 bunch Scallionschopped
- β1 piece Gingergrated
- β2 cloves Garlicminced
- β1 tablespoon Sesame seedsoptional
Instructions

Bring a pot of water to a boil and cook the noodles according to the package instructions. Drain and set aside.

Heat the peanut oil in a wok or large skillet over medium-high heat.

Add the minced garlic and grated ginger to the wok and stir-fry for 1 minute.

Add the ground pork to the wok and cook, breaking it up with a spoon, until it is no longer pink.

Add the chopped scallions to the wok and stir-fry for another minute.

Add the Zha Jiang sauce and soy sauce to the wok and stir-fry for 1 minute.

Add the cooked noodles to the wok and stir-fry for 1-2 minutes, until the noodles are well coated with the sauce.

Transfer the noodles to a serving dish and garnish with sesame seeds if using.
