Japanese Zha Mian
A Japanese-inspired dish featuring zha (dried soybeans) and mian (Japanese noodles), stir-fried with jiang (fermented soybean paste) and midnight sauce. Savor the rich flavors and textures of this savory noodle dish.
Ingredients
- β1 cup Zha (dried soybeans)soaked overnight
- β8 oz Mian (Japanese noodles)
- β2 tbsp Jiang (fermented soybean paste)
- β2 tbsp Midnight sauceavailable in Asian grocery stores
- β2 tbsp Vegetable oil
- β1 bunch Green onionschopped
- β1 piece Gingergrated
- β2 tbsp Soy sauce
Instructions

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.

Add the chopped green onions and cook until fragrant, about 1 minute.

Add the grated ginger and cook for an additional minute.

Add the soaked zha and cook until they start to soften, about 2-3 minutes.

Add the jiang (fermented soybean paste) and stir-fry for 1-2 minutes.

Add the mian (Japanese noodles) and cook until they are well coated with the sauce, about 2-3 minutes.

Add the midnight sauce and stir-fry for an additional 1-2 minutes.

Season with soy sauce to taste.
