Monsoon Delight Mousse
A refreshing and creamy dessert made with monsoon delight, a vegan alternative to traditional mascarpone. This light and airy mousse is perfect for warm weather.
Ingredients

- β2 tbsp Maple syrup
- β1 tsp Lemon juice
- β1 tsp Vanilla extract
- β1 cup Aquafaba
- β1/2 cup Coconut cream
- β1/4 tsp Sugar-free vanilla beans

In a blender, combine Monsoon Delight, maple syrup, lemon juice, vanilla extract, aquafaba, coconut cream, and sugar-free vanilla beans.

Blend on high speed for 2-3 minutes, or until the mixture is smooth and creamy.

Pour the mixture into individual serving cups or ramekins.

Refrigerate for at least 2 hours, or until set.
