Thai Coconut Cream Pastry Bites
A fusion of Thai flavors with a crispy pastry crust, these bite-sized treats are perfect for snacking. They're also surprisingly easy to make!
Ingredients
- β250g low-fat pastrythawed
- β200ml coconut creamfull-fat
- β100ml algerian creamy saucesee notes
- β2 tbsp sugargranulated
- β2 eggsbeaten
- β1 tsp vanilla extractoptional
Instructions

Preheat the oven to 180Β°C (350Β°F).

Roll out the pastry to a thickness of 3mm (1/8 inch).

Cut out squares of pastry, about 7cm (3 inches) per side.

Spoon a small amount of coconut cream onto one half of each square.

Drizzle a little algerian creamy sauce on top of the coconut cream.

Fold the other half of the pastry square over to form a triangle, pressing the edges to seal.

Brush the tops of the pastry with a little egg and sprinkle with sugar.

Place the pastry bites on a baking tray lined with parchment paper.

Bake for 20-25 minutes, or until the pastry is golden brown.

Allow to cool for a few minutes before serving.
