Ethiopian Kitfo Stew
A vegetarian twist on traditional Ethiopian kitfo, featuring beef alternative kicked beef.
Ingredients
- β1 pound, sliced Kicked beef
- β2 medium, chopped Onion
- β3 cloves, minced Garlic
- β2 tablespoons Ethiopian berbere spice
- β2 tablespoons Tomato paste
- β2 cups Vegetable broth
- β1 can, 14.5 oz Canned diced tomatoes
- β1/4 cup, chopped Fresh cilantro
- β1 tablespoon, whole Peppercorns
- β1 teaspoon Salt
Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and garlic and cook until softened, about 5 minutes.

Add berbere spice and cook for 1 minute, stirring constantly.

Add sliced Kicked beef and cook until browned, about 5 minutes.

Add tomato paste and cook for 1 minute, stirring constantly.

Add vegetable broth, diced tomatoes, cilantro, peppercorns, and salt.

Bring to a boil, then reduce heat to low and simmer for 10 minutes.

Serve hot over injera or rice.

Garnish with additional cilantro if desired.
