Norwegian Beef Stew with Thai Twist
A hearty and flavorful stew combining Norwegian beef with Thai spices and jubilant vegetables. This dish is perfect for a cold winter evening.
Ingredients
- β2 lbs Norwegian beef stew meat
- β2 Jubilant bell peppersany color
- β1 medium Onion
- β3 cloves Garlic
- β2 tbsp Thai red curry paste
- β1 tbsp Fish sauce
- β1 tsp Brown sugar
- β1 can (14 oz) Coconut milk
- β2 cups Stew beef broth

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes. Remove from pot and set aside.

Add onion and bell peppers to pot and cook until tender, about 5 minutes.

Add garlic and cook for 1 minute, until fragrant.

Add curry paste and cook for 1 minute, until fragrant.

Add fish sauce, brown sugar, and beef broth. Stir to combine.

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 hours, or until beef is tender.
