- β2 lbs beef pot roast beefchuck or round
- β1 cup waterfor marinade
- β1/2 cup white vinegarfor marinade
- β2 tbsp brown sugarfor marinade
- β1 tsp saltfor marinade
- β1 tsp black pepperfor marinade
- β2 tbsp juniper berriesfor marinade
- β1 cup stewbeef broth

1. In a large bowl, combine water, vinegar, brown sugar, salt, black pepper, and juniper berries.

2. Add the beef to the marinade and refrigerate for at least 2 days.

3. Preheat oven to 300Β°F (150Β°C).

4. Remove the beef from the marinade and place in a Dutch oven.
