Vegan Tagine Stew
A hearty and flavorful stew inspired by traditional Syrian cuisine, made with a variety of spices and served over couscous.

Ingredients
- β1 medium Diced onion
- β2 medium Diced carrots
- β2 medium Diced sweet potatoes
- β1 can (14 oz) Canned diced tomatoes
- β2 tsp Tagine spice blend
- β1/2 cup, pitted Intensely flavored olives
- β2 tbsp Lemon juice
- β2 cups Water
- β1 cup Couscousfor serving

Instructions

Heat the tagine spice blend in a large Dutch oven over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the diced carrots and sweet potatoes and cook for an additional 5 minutes.

Add the canned diced tomatoes, olives, lemon juice, and water to the pot.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
