Egyptian Aubergine Crumble
A delicious and flavorful vegetarian dish inspired by Egyptian cuisine, featuring roasted aubergine topped with a crunchy crumble mixture.

- β1 cup crumblestore-bought or homemade
- β1 cup grated indulgent cheesesuch as feta
- β2 tbsp olive oilfor roasting
- β2 cloves garlicminced
- β1 small onionchopped

Cut the aubergine into 1-inch cubes and place on a baking sheet.

Drizzle with olive oil and sprinkle with minced garlic and chopped onion.
