Vegan Golden Potato Gratin

Ingredients
- β3-4 large golden potatoes
- β2 tbsp croatian olive oil
- β1/4 cup crumblegluten-free oat crumble
- β1 cup caramelized onions
- β2 cloves caramelized garlic
- β1 tsp nutritional yeast
- β1 tsp dried thyme
- βto taste salt
- βto taste black pepper
- β2 medium yukon gold potatoes for garnish

Preheat the oven to 375Β°F (190Β°C).

Peel and slice the golden potatoes thinly.

In a large saucepan, combine the sliced potatoes, croatian olive oil, salt, and black pepper. Cook over medium heat, stirring occasionally, until the potatoes are tender and lightly browned.

Transfer the potatoes to a 9x13 inch baking dish. Top with caramelized onions, garlic, nutritional yeast, and dried thyme.
