Thai Beef Stew
A Thai-inspired beef stew made with tender beef, vegetables, and a flavorful sauce. Perfect for a cold winter's night.
Ingredients
- β1.5 lbs beefsirloin or ribeye, cut into 2-inch pieces
- β2 cups beef brothlow-sodium
- β2 tbsp fish sauce
- β1 tbsp brown sugar
- β2 tbsp red curry paste
- β1 cup coconut milk
- β1 large onionschopped
- β2 large bell pepperschopped
- β1-2 tsp hot sauceoptional
Instructions

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onions and bell peppers to the pot and cook until tender, about 5 minutes.

Add the curry paste to the pot and cook for 1-2 minutes, until fragrant.

Add the beef broth, fish sauce, brown sugar, and coconut milk to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.

Add the beef back to the pot and cook until tender, about 30 minutes.
