German Chickpea Bowl
A hearty and flavorful German-inspired bowl filled with chickpeas, herbs, and spices.
Ingredients
- β1 can (15 ounces) chickpeasdrained and rinsed
- β1 medium onionchopped
- β1 teaspoon caraway seeds
- β1 teaspoon dried thyme
- β1/2 teaspoon garlic powder
- βto taste salt
- βto taste black pepper
- β4 slices German breadtoasted
- β1 head lettucechopped
- β1 medium tomatochopped

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, whisk together the chickpeas, onion, caraway seeds, thyme, garlic powder, salt, and pepper.

Transfer the mixture to a baking dish and bake for 20-25 minutes, stirring occasionally.

Meanwhile, toast the German bread and chop the lettuce and tomato.

To assemble the bowls, place a slice of toasted bread at the bottom, followed by a spoonful of the chickpea mixture, some chopped lettuce, and a slice of tomato.
