Miso Chickpea Bowl
A Japanese-inspired bowl filled with miso-glazed chickpeas, served over a bed of steaming hot rice.
Ingredients
- β1 can chickpeas
- β2 tbsp miso paste
- β1 tbsp soy sauce
- β1 tbsp rice vinegar
- β1 tsp sugar
- β1 tsp sesame oil
- β1/4 cup green onions
- β2 tbsp toasted sesame seeds
- β1 cup steamed rice
- β1/4 cup pickled ginger

Preheat the oven to 400Β°F (200Β°C).

In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sugar, and sesame oil.

Add the chickpeas to the bowl and toss to coat with the miso glaze.

Transfer the chickpeas to a baking sheet lined with parchment paper.

Roast the chickpeas in the oven for 20-25 minutes, or until crispy and golden brown.

While the chickpeas are roasting, cook the steamed rice according to package instructions.

In a small pan, toast the sesame seeds over medium heat until fragrant.

Once the chickpeas are done, remove them from the oven and toss with toasted sesame seeds.

To assemble the bowls, place a scoop of steamed rice in the bottom, followed by roasted chickpeas, pickled ginger, and green onions.
