Spanish Vegan Tortilla
A vegan twist on the classic Spanish omelette. This recipe replaces eggs with a nourishing mixture of garlicky goodness.
Ingredients
- ●1 Spanish tortilla
- ●200g Garlicky mixturesee notes
- ●2 tbsp Nourishing oile.g. olive oil
- ●to taste Salt
- ●chopped Fresh parsleyfor garnish

1. Preheat your oven to 375°F (190°C).

2. In a blender or food processor, combine 4 cloves of garlic, 1/2 cup of nutritional yeast, and 1/4 cup of lemon juice. Blend until smooth.

3. In a large skillet, heat 1 tablespoon of oil over medium heat.

4. Add the blended garlicky mixture and cook for 2-3 minutes, stirring constantly.

5. Add the diced Spanish tortilla and cook for an additional 2-3 minutes, stirring frequently.

6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the mixture is set and lightly browned.

7. Remove the skillet from the oven and sprinkle with salt to taste.
