Vegetarian Charred Vegetable Tagine
A flavorful and aromatic tagine made with charred vegetables, perfect for a vegetarian meal. This dish is inspired by the rich culinary traditions of Tunisia.
Ingredients

- β2 Zucchinisliced
- β1 Red bell pepperdiced
- β2 tablespoons Olive oil
- β2 cloves Garlicminced
- β1 teaspoon Ground cumin
- β1 teaspoon Ground coriander
- βto taste Salt

Heat 1 tablespoon of olive oil in a large saucepan over medium heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the sliced zucchini and diced red bell pepper, cook for 5-7 minutes until tender.
