Charred Tunisian Tagine Stew
A flavorful and comforting stew from North Africa, made with charred vegetables and served with warm pita bread.
Ingredients
- β2 medium Charred EggplantBrush with olive oil and grill until charred.
- β1 cup Tunisian OlivesPitted and sliced.
- β1 large OnionsChopped.
- β3 cloves GarlicMinced.
- β1 can Canned Tomatoes14 oz, diced.
- β2 tablespoons Lemon JuiceFreshly squeezed.
- β2 tablespoons Olive OilFor brushing vegetables.
- β4-6 Pita BreadFor serving.
Instructions

Heat 1 tablespoon of olive oil in a large Dutch oven over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the charred eggplant, Tunisian olives, canned tomatoes, lemon juice, and 1 cup of water.

Season with salt and pepper to taste.

Bring the stew to a simmer and cook for 20-25 minutes, or until the flavors have melded together.
