Thai-Style Charred Chicken Tagine
A flavorful and aromatic Thai-inspired dish featuring charred chicken cooked in a rich and spicy tagine sauce.
Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β2 cups charred tomatoesfresh or canned
- β1 large red bell pepperdiced
- β1 medium red oniondiced
- β3 cloves garlicminced
- β2 tablespoons tunisian harissaor more to taste
- β2 tablespoons fish sauceor more to taste
- β2 tablespoons brown sugaror more to taste
- β1 teaspoon crushed red pepperor more to taste
- β1 cup coconut milkfull-fat

In a large pan over medium-high heat, char the chicken until browned on all sides.

Remove the chicken from the pan and set aside.

Add the diced red bell pepper and red onion to the pan and cook until tender.

Add the minced garlic and cook for 1 minute.

Stir in the tunisian harissa, fish sauce, brown sugar, and crushed red pepper.

Add the charred tomatoes, coconut milk, and chicken back to the pan.

Simmer the tagine sauce over medium-low heat for 20-25 minutes.
