Shio Ramen with Tofu and Aromatic Vegetables
A hearty and comforting Japanese-inspired bowl of noodles, topped with crispy tofu and aromatic vegetables.
Ingredients
- β200g Ramen noodles
- β200g Tofuextra-firm, drained and cut into small cubes
- β2 tablespoons Vegetable oil
- β2 teaspoons Shio Ramen seasoning
- β1/4 cup Sliced scallions
- β1/2 cup Diced carrots
- β1 cup Diced bok choy
- β1/2 cup Sliced shiitake mushroomsoptional
- β1 tablespoon Sesame seeds

Cook the ramen noodles according to the package instructions.

In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

Add the diced carrots and cook for 2-3 minutes, or until they start to soften.

Add the diced bok choy and cook for an additional 2-3 minutes, or until it starts to wilt.

Add the sliced scallions and cook for 1 minute, or until they are slightly softened.

Add the cubed tofu and cook for 2-3 minutes, or until it is golden brown on all sides.

Add the sliced shiitake mushrooms (if using) and cook for an additional 2 minutes.

Add the cooked ramen noodles to the pan and stir to combine with the vegetables and tofu.

Add the Shio Ramen seasoning and stir to combine.

Divide the noodles among four bowls and top with sesame seeds.
