Italian Tagine Casserole
A fusion of Italian and North African flavors, this casserole combines the rich flavors of tagine with the comfort of a classic Italian dish.
Ingredients
- β1 cup arabian casserolecrushed
- β1/4 cup saudi funkychopped
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium eggplantsliced
- β1 pound ground beef
- β2 tablespoons tomato paste
- β1 teaspoon dried oregano
- βto taste salt

Preheat oven to 375Β°F (190Β°C).

Heat the olive oil in a large skillet over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the eggplant and cook until tender, about 10 minutes.

Add the ground beef and cook until browned, breaking up with a spoon as needed.

Stir in the tomato paste, oregano, and salt. Cook for 1 minute.

Transfer the mixture to a 9x13 inch baking dish.

Sprinkle the crushed casserole and chopped funky on top.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is lightly browned.
