Saudi Arabian Chicken Tagine Casserole
A fusion of Middle Eastern and Chinese flavors, this dish combines the rich taste of Saudi Arabian tagine with the comfort of a Chinese casserole.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 teaspoons arabian tagine spice blendstore-bought or homemade
- β2 cups funky riceuncooked
- β2 cups aerated vegetable brothlow-sodium
- β1 package casserole mixstore-bought
- β1/4 cup saudi dateschopped
- β1/4 cup scallionschopped
- β2 tablespoons coconut oilmelted

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the coconut oil over medium-high heat.

Add the chicken breast and cook until browned, about 5 minutes.

Add the Arabian tagine spice blend and cook for an additional minute.

In a large mixing bowl, combine the funky rice, aerated vegetable broth, casserole mix, saudi dates, and chopped scallions.

Stir in the cooked chicken and mix well.

Transfer the mixture to a 9x13 inch baking dish.

Cover the dish with aluminum foil and bake for 25 minutes.
