Coq au Vin
A classic French dish made with chicken cooked in red wine and mushrooms.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β1 large onionsthinly sliced
- β2 medium carrotspeeled and sliced
- β1 cup red winedry red wine
- β1 cup chicken brothlow-sodium
- β8 oz mushroomsbutton or cremini
- β6 slices bacondiced

Heat the oven to 300Β°F (150Β°C).

Season the chicken with salt and pepper.

In a large Dutch oven, cook the bacon over medium heat until crispy.

Remove the bacon and set aside.

Add the onions and carrots to the pot and cook until the vegetables are tender.

Add the mushrooms and cook until they release their liquid and start to brown.

Add the red wine and chicken broth to the pot, scraping up any browned bits.

Return the bacon to the pot and add the chicken.

Cover the pot and transfer it to the preheated oven.

Bake for 25-30 minutes or until the chicken is cooked through.

Season the sauce with salt and pepper to taste.
