Moroccan Apricot Tagine
A traditional North African stew originating from Morocco, slow-cooked in a clay pot with sweet and tangy flavors.

- β1 cup, chopped Middle Eastern apricots
- β1/4 cup, chopped Zesty preserved lemons
- β2 tablespoons Velvety olive oil
- β1 teaspoon Eastern cumin
- βto taste Salt
- β1/4 cup, chopped Fresh parsley

Instructions

Heat the olive oil in a large clay pot over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the chopped apricots, preserved lemons, cumin, and salt. Stir well.
