Apricot Tagine Chicken

- β1 cup apricot tagine saucesee below for homemade sauce ingredients
- β2 tablespoons soy sauceuse gluten-free soy sauce
- β2 tablespoons sugar
- β2 tablespoons rice vinegar
- β2 tablespoons olive oil
- β1/4 cup green onionschopped
- β1 tablespoon sesame seeds

Preheat oven to 400Β°F (200Β°C).

Season the chicken breast with salt, pepper, and a pinch of sugar. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken breast until browned on both sides, about 5 minutes per side.

Transfer the chicken breast to a baking dish and bake for 20-25 minutes or until cooked through.

While the chicken is cooking, heat the remaining 1 tablespoon of olive oil in a small saucepan over medium heat.
