Uruguayan Beef Casserole
A hearty, flavorful casserole from Uruguay, made with tender beef and a hint of spice.
Ingredients
- β1 lb beef (ground)80/20 lean to fat ratio
- β1 tsp zestyground cumin, paprika, and chili powder
- β1 (16 oz) box casseroleUruguayan-style casserole mix
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato pasteconcentrated
- β1 cup beef brothlow-sodium
- β1 cup shredded cheddaroptional
- β1 cup shredded mozzarellaoptional

Preheat oven to 375Β°F (190Β°C).

Cook the ground beef in a large skillet over medium-high heat until browned, breaking it up with a spoon as it cooks.

Add the onion and garlic to the skillet and cook until the onion is translucent.

Stir in the zesty seasoning, casserole mix, and tomato paste. Cook for 1 minute.

Add the beef broth to the skillet and stir to combine.

Transfer the mixture to a 9x13 inch baking dish.

If using cheese, sprinkle it evenly over the top of the casserole.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the casserole is hot and bubbly.

Serve hot, garnished with chopped fresh cilantro if desired.
