Puff Pastry Spring Rolls with Zesty Filling
A delicious and crispy Thai-inspired spring roll dish with a zesty and flavorful filling, wrapped in puff pastry.
Ingredients
- ●1 package (thawed) Puff pastry dough
- ●1 cup Zesty filling (see below for ingredients)
- ●1/2 cup Vegetable oilfor brushing pastry
- ●to taste Salt

1. Preheat the oven to 400°F (200°C).

2. Roll out the puff pastry dough on a lightly floured surface to a thickness of about 1/8 inch.

3. Cut the dough into 4 equal rectangles.

4. Spoon the zesty filling down the center of each rectangle, leaving a 1/2 inch border around the edges.

5. Brush the edges of the pastry with water, then fold the pastry over the filling to form a triangle.

6. Press the edges to seal the pastry, making sure there are no air pockets.

7. Brush the tops of the rolls with vegetable oil and sprinkle with salt and pepper.

8. Place the rolls on a baking sheet lined with parchment paper, seam-side down.

9. Bake for 20-25 minutes, or until the pastry is golden brown.
