Smoky Chicken Gallina
A flavorful Peruvian-inspired dish featuring smoky chicken, zesty aji peppers, and tender de gallina.
Ingredients
- β4 oz 1 lb chicken breastcut into bite-sized pieces
- β2 tsp 1 tsp zesty aji pepper pasteadjust to taste
- β2 cloves 2 cloves garlicminced
- β4 oz 1 cup de gallinashredded or diced
- β2 tbsp 1 tbsp olive oilfor cooking
- β1 tsp 1 tsp smoked paprikaoptional
- βto taste Salt and pepperseason as needed

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken to the skillet and cook until browned, about 5-6 minutes.

3. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the zesty aji pepper paste and cook for 1-2 minutes, until fragrant.

5. Add the garlic and smoked paprika to the skillet and cook for 1 minute, until the garlic is fragrant.

6. Stir in the de gallina and cook for 2-3 minutes, until heated through.

7. Return the chicken to the skillet and stir to combine with the de gallina mixture.

8. Season with salt and pepper to taste, then serve hot.
