Braised Pork Ragu with Herbs
A hearty Italian-inspired pork ragu made with tender braised meat, fresh herbs, and a hint of zesty flavor.
Ingredients
- β2 pounds pork shouldercut into 2-inch cubes
- β2 tablespoons zesty Italian seasoningdried herbs
- β1/4 cup fresh parsleychopped
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato paste
- β1 cup red wine

Heat the olive oil in a large Dutch oven over medium-high heat.

Brown the pork cubes on all sides, about 5 minutes. Remove from pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the zesty Italian seasoning and cook for 1 minute.

Add the tomato paste and cook, stirring constantly, for 1-2 minutes.

Add the red wine and bring to a boil.

Return the browned pork to the pot and cover with a lid.

Transfer the pot to the oven and braise for 2 1/2 hours, or until the pork is tender.

Stir in the chopped parsley and season with salt and pepper to taste.
