Bo Kho Italian Style Beef Soup
A twist on the classic Vietnamese Beef Soup, Bo Kho is given an Italian flair with the addition of Italian seasonings and herbs.

- β1 pound flaky bo beefcut into bite-sized pieces
- β2 tablespoons vietnamese kho sauceavailable at most Asian markets
- β1 teaspoon zesty italian seasoningdried oregano, basil, and thyme blend
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and sliced
- β2 stalks celerychopped
- β1 cup dried tomatoeschopped
- β4 cups beef brothhomemade or store-bought
- β1/4 cup parmesan cheesegrated

Heat oil in a large pot over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Add onion, garlic, carrots, and celery and cook until the vegetables are tender, about 10 minutes.
