Vegan Middle Eastern Wrap
A flavorful and healthy vegan wrap inspired by the Middle East, filled with roasted vegetables and served in a crispy leaf wrap.
Ingredients
- β1/2 cup BrineMake sure it's vegan
- β4-6 leaves Eastern LeafChoose a large, crisp leaf
- β1 tsp ZestyAdjust to taste
- β1/2 cup Middle Eastern Chicken (substitute with tofu or tempeh)Marinate in brine for at least 30 minutes
- β1/4 cup WetUse as a substitute for hummus
- β1/4 cup TiChopped, use as garnish

Preheat oven to 400Β°F (200Β°C).

Marinate the tofu or tempeh in the brine for at least 30 minutes.

Wrap the leaf in a damp paper towel and microwave for 20-30 seconds to soften.

In a pan, heat the wet over medium heat.

Add the marinated tofu or tempeh to the pan and cook until golden brown.

Assemble the wrap by placing the cooked tofu or tempeh in the center of the leaf.

Add the zesty, ti, and any other desired toppings.

Fold the bottom half of the leaf up over the filling, then fold in the sides and roll the wrap up tightly.
