Wholesome Mediterranean Stir Fry
A flavorful and nutritious vegetarian stir fry that combines the best of Mediterranean cuisine with wholesome ingredients.
Ingredients
- β2 lemons, juiced Zestful Lemon
- β2 tbsp Wholesome Olive Oil
- β1 large red bell pepper, sliced Mediterranean Pepper
- β1 can (14.5 oz) crushed tomatoes Mediterranean Tomato
- β1 tbsp Tomato paste
- β1 tsp dried Oregano
- βto taste Salt
- β1-2 cloves Garlic, minced
- β1 cup, sliced Stir-fry vegetables (such as broccoli, carrots, and bell peppers)

Heat the olive oil in a large skillet over medium-high heat.

Add the sliced pepper and cook until tender, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the crushed tomatoes, tomato paste, dried oregano, and salt. Stir to combine.

Bring the mixture to a simmer and let cook for 5-7 minutes, stirring occasionally.
