Golden Mediterranean Chicken Skillet
A flavorful and healthy skillet dish made with chicken, Mediterranean spices, and golden yellow vegetables.
Ingredients
- β 1 lb boneless, skinless chicken breastcut into 1-inch pieces
- βsliced 2 yellow bell peppers
- βchopped 1 large yellow onion
- βminced 2 cloves garlic
- βhalved 1 cup golden cherry tomatoes
- β 2 tbsp olive oil
- β 1 tsp dried oregano
- β 1 tsp smoked paprika
- β Salt and pepperto taste
Instructions

Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tbsp of olive oil to the skillet.

Add the sliced yellow bell peppers and chopped yellow onion to the skillet and cook until tender, about 5 minutes.

Add the minced garlic to the skillet and cook for 1 minute.

Add the halved golden cherry tomatoes, dried oregano, smoked paprika, salt, and pepper to the skillet and stir to combine.

Return the chicken to the skillet and stir to combine with the vegetables and spices.

Cook for an additional 2-3 minutes, until the chicken is cooked through.
