Kenyan Vegetable Wrap
A flavorful vegetarian wrap filled with sautéed vegetables, perfect for a quick and easy meal.
Ingredients
- ●1 yellow bell peppersliced
- ●1 wraplarge flour tortilla
- ●1 muffinused for breadcrumbs
- ●1/2 onionsliced
- ●2 carrotspeeled and grated
- ●1 zucchinisliced
- ●1 tsp cuminground
- ●1 tsp corianderground
- ●to taste salt
- ●to taste black pepper

Heat oil in a pan over medium heat.

Add sliced onions and cook until softened, about 3-4 minutes.

Add grated carrots and cook for an additional 2-3 minutes.

Add sliced zucchini and cook until tender, about 3-4 minutes.

Add cumin and coriander, and stir to combine.

Season with salt and black pepper to taste.

Warm the wrap in the microwave or in a dry pan for 10-15 seconds.

Spoon the vegetable mixture onto the center of the wrap.

Sprinkle with breadcrumbs (muffin crumbs) and fold the wrap to enclose.
