Golden Filipino Frittata
A twist on the classic frittata, incorporating Filipino flavors. Perfect for a hearty breakfast or brunch.
Ingredients
- ●2 medium, diced yellowed tomatoesFresh or canned, your choice
- ●2 medium, peeled and diced golden potatoesTry to use high-starch potatoes for fluffiness
- ●1/2 pound, sliced filipino longganisaReplace with regular sausage for a different flavor
- ●6 large eggsFresh eggs for the best results
- ●1 tablespoon, chopped fresh cilantro (optional) frittataGarnish with fresh herbs for a pop of color

Preheat oven to 375°F (190°C).

In a large skillet, sauté diced tomatoes and potatoes in a little oil until they're tender.

Add sliced longganisa and cook until browned.

In a large bowl, whisk together eggs and a pinch of salt.

Add the egg mixture to the skillet and stir to combine.
