Croatian Frittata with Taleggio
A creamy and savory Croatian-inspired frittata filled with melted Taleggio cheese, perfect for a comforting breakfast or brunch.
Ingredients

- β1 medium Yellowed onionschopped
- β1 pound Croatian sausagecasings removed, crumbled
- β8 ounces Taleggio cheesesliced
- β1/4 cup Fresh parsleychopped
- βto taste Salt
- βto taste Black pepper
- β6 large Eggs

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, cook the Croatian sausage over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.

Add the diced potatoes and chopped onions to the skillet and cook until the potatoes are tender, about 10 minutes.

In a large bowl, whisk together the eggs and a pinch of salt and pepper.

Add the cooked sausage and potato mixture to the bowl and stir to combine.

Pour the egg mixture into a greased 9-inch (23cm) pie plate or skillet.

Top with sliced Taleggio cheese and chopped parsley.
