Traditional Moroccan Yellow Chicken Tagine
A classic North African dish originating from the Middle East and Eastern Mediterranean, made with tender lamb and a blend of aromatic spices.
Ingredients
- β1 kg Lamb ShoulderBone-in, cut into 2-inch pieces
- β2 medium Yellow OnionChopped
- β3 cloves GarlicMinced
- β1-inch piece GingerGrated
- β1 tsp Cumin
- β1 tsp Coriander
- β0.5 tsp Cinnamon
- β0.5 tsp Turmeric
- β1 tsp Salt
- β1 tsp Black Pepper

Heat oil in a large clay or ceramic tagine over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and grated ginger; cook for 1 minute.

Add the lamb pieces and cook until browned, about 5 minutes.

Add the cumin, coriander, cinnamon, turmeric, salt, and black pepper.

Stir to combine and add 2 cups of water.

Bring to a boil, then reduce heat to low and simmer, covered, for 1.5 hours.
