- β1 medium, chopped Yellow Onion
- β3 cloves, minced Garlic
- β1/4 cup chopped fresh tomatoes Plaki
- β2 tablespoons Greek Olive Oil
- βto taste Salt
- βto taste Black Pepper
- βchopped, for garnish Fresh Parsley

Heat oil in a large saucepan over medium heat.
