Yellow Gigantes Stew
A hearty and comforting vegan stew made with yellow gigantes beans and a medley of vegetables.
Ingredients
- ●1 cup dried yellow gigantes beanssoaked overnight and drained
- ●2 medium plaki onionschopped
- ●2 large Greek tomatoeschopped
- ●2 tablespoons olive oil
- ●2 cloves garlicminced
- ●2 tablespoons lemon juice
- ●1 teaspoon oregano
- ●to taste salt
- ●to taste black pepper
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onions and sauté until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the chopped tomatoes, soaked and drained yellow gigantes beans, lemon juice, dried oregano, salt, and black pepper.

Stir well to combine, then bring the mixture to a simmer.

Reduce the heat to low and let the stew cook, covered, for 30-40 minutes, or until the beans are tender.
