Syrian Skillet Scramble
A flavorful and filling breakfast dish made with scrambled eggs, crispy tomatoes, and savory Syrian spices.
Ingredients

- β2 tbsp xtra virgin olive oil
- β2 tomatoany variety will do
- β1 tsp syrian spice blendavailable at most middle eastern markets
- βto taste salt
- β1/2 cup silk tofu (crumbled)silky texture, not firm
Instructions

Crack the eggs into a bowl and whisk them together. Add a pinch of salt and a sprinkle of Syrian spice blend.

Heat the xtra virgin olive oil in the skillet over medium heat.

Add the crumbled tofu and cook until it starts to brown, about 2-3 minutes.

Add the diced tomatoes to the skillet and cook for another 2-3 minutes, until they start to soften.

Pour the whisked eggs over the tomatoes and tofu.

Scramble the eggs until they are cooked through, breaking them up with a spatula as they cook.
