- β3 cloves Garlic
- β2 inches Galangal
- β4 medium Carrots
- β2 large Potatoes
- β1 bunch Atakilt (Ethiopian mustard greens)
- β2 tablespoons Xtra virgin olive oil
- β2 cups Salty vegetable broth

Heat the olive oil in a large pan over medium heat.

Add the onions, garlic, and galangal. Cook until the onions are translucent.

Add the carrots and potatoes. Cook for 5 minutes.

Add the Atakilt and vegetable broth. Season with salt and pepper to taste.
