Spring Shrimp Rolls
A delicious Vietnamese-inspired dish featuring shrimp and fresh spring rolls, perfect for a quick and easy meal.
Ingredients
- β1 package rice paper wrappers
- β1 pound shrimp
- β1 cup spring roll filling
- β1/4 cup mint leaves
- β1/2 cup cucumber
- β1/2 cup carrot
- β2 tablespoons vietnamese dressing

Prepare the shrimp by marinating them in salt and pepper for 30 minutes.

Heat 1 tablespoon of oil in a pan over medium-high heat and cook the shrimp until pink and fully cooked.

Prepare the spring roll filling by mixing together the spring roll filling, mint leaves, cucumber, and carrot.

Assemble the spring rolls by placing a small amount of the filling in the center of a rice paper wrapper.

Add a cooked shrimp on top of the filling and fold the wrapper over to form a roll.
