Thai Shrimp Spring Rolls
A classic Thai dish featuring shrimp spring rolls served with a sweet chili sauce. Perfect for a quick and easy meal.

- β1 package spring rollsxtra or crisp
- β1 package vietnamese rollsoptional
- β1 bunch spring onionschopped
- β1 cup bean sproutschopped
- β1/4 cup chopped cilantrooptional
- β2 tablespoons fish sauceoptional
- β1 tablespoon sugaroptional
- β2 tablespoons peanut oilfor frying

Prepare the filling by combining shrimp, spring onions, bean sprouts, and chopped cilantro (if using) in a bowl.

Soak the spring roll wrappers in warm water for 10-15 minutes.

Assemble the rolls by placing a tablespoon of the filling in the center of each wrapper, then folding the bottom half over the filling, followed by the sides and finally the top.

Heat the peanut oil in a large skillet over medium-high heat.

Fry the rolls in batches until golden brown, about 2-3 minutes per side.
