Hearty Canadian Chowder
A comforting and flavorful vegetarian chowder that is perfect for a chilly day. This recipe uses a combination of vegetables and crispy xtra potatoes to create a satisfying and filling meal.
Ingredients
- β2 large xtra potatoes peeled and diced
- β6 slices crisp baconoptional, omit for vegetarian diet
- β1/4 cup haddockreplaced with vegetarian option (see below)
- β1/4 cup vegetarian haddock filletsused as a substitute for haddock
- β1 packet canadian chowder mixor create your own mix with vegetables
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 medium carrotspeeled and diced
- β2 stalks celerychopped

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the diced carrots and celery and cook for 5 minutes.

Add the diced xtra potatoes and cook for 5 minutes.
