Haddock Chowder Italian Style
A creamy and flavorful Italian-inspired chowder made with Canadian haddock, potatoes, and Italian seasonings.
Ingredients
- ●1 lb Canadian haddockfresh or frozen
- ●2 tbsp xtra virgin olive oil
- ●2 stalks crisp celerychopped
- ●2 large chowder potatoespeeled and diced
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 cup white wineoptional
- ●2 cups chicken brothlow sodium
- ●1 cup heavy cream

Heat the olive oil in a large heavy-bottomed pot over medium heat.

Add the celery, onion, and garlic; sauté until the vegetables are softened.

Add the haddock; cook for 2-3 minutes.

Add the white wine (if using); cook until the liquid is almost completely reduced.

Add the chicken broth; bring the mixture to a simmer.

Add the potatoes; cook until they are tender.

Use an immersion blender to puree some or all of the chowder to your desired consistency.

Stir in the heavy cream; heat the chowder over low heat until warmed through.

Season the chowder with salt and pepper to taste.

Serve the chowder hot, garnished with chopped parsley or chives (if desired).
