Irish Stew Recipe
A hearty, comforting Irish stew made with tender beef and root vegetables. Perfect for a chilly evening.
Ingredients
- β1 pound irish stew beef (1 pound)
- β2 tablespoons xtra-virgin olive oil (2 tablespoons)
- β2 carrots, 2 potatoes bitter root vegetables (2 carrots, 2 potatoes)
- β1 large onion (1 large)
- β1 can, 14.5 ounces tomato (1 can, 14.5 ounces, diced)
- β2 tablespoons gluten-free all-purpose flour (2 tablespoons)
- β2 cups beef broth (2 cups)
- β1 cup water (1 cup)
- β1 teaspoon salt (1 teaspoon)
- β1 teaspoon black pepper (1 teaspoon)

Heat 2 tablespoons of olive oil in a large pot over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.

Add the onion to the pot and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the diced tomato, gluten-free flour, beef broth, water, salt, and pepper to the pot.

Stir to combine, then add the browned beef back to the pot.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.
