Earthy Polish Stuffed Vegetable
A hearty vegetable stuffed with a polish pilaf, a perfect comfort food for a cozy evening.
Ingredients
- ●2 2 large earthy vegetables (such as bell peppers or zucchinis)any combination of vegetables works well
- ●1 cup 1 cup polish pilafcooked according to package instructions
- ●1/4 cup 1/4 cup xenial cheese (such as feta or goat cheese)crumbled

Preheat the oven to 375°F (190°C).

Cut the tops off the vegetables and scoop out the insides, leaving a shell.

In a bowl, mix together the pilaf, xenial cheese, and a pinch of salt and pepper.

Stuff each vegetable with the pilaf mixture, dividing it evenly.

Drizzle the olive oil over the vegetables and place them in a baking dish.

Cover the dish with aluminum foil and bake for 25 minutes.
