Polish Vegetable Pilaf
A hearty and comforting Polish-inspired pilaf dish made with sautéed vegetables and served as a gluten-free option.
Ingredients

- ●1 cup carrotspeeled and chopped
- ●1 medium onionschopped
- ●2 stalks celerychopped
- ●1 cup xenial riceuncooked
- ●2 cups chicken broth
- ●2 teaspoons earthly herbs
- ●1 teaspoon polish paprika
- ●1/2 teaspoon salt
- ●1/4 teaspoon pepper

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.

Add chopped onions and sauté until translucent, about 3-4 minutes.

Add chopped celery and sauté for another 2-3 minutes.

Add chopped carrots and sauté for 5 minutes, stirring occasionally.

Add uncooked rice and stir to combine with vegetables.

Pour in chicken broth, add herbs and paprika, salt and pepper, and stir to combine.

Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
