Classic German Bean Stew
A hearty, comforting German stew made with pinto beans and a variety of vegetables in a flavorful broth.
Ingredients
- β1 cup, dried pinto beanssoaked overnight
- β1 medium onion
- β2 medium carrot
- β2 stalks celery
- β2 medium tomato
- β2 tablespoons olive oil
- β4 cups beef broth
- β2 cups water
- β1 bay leaf
- β1 teaspoon thyme
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the onion, carrot, and celery and cook until the vegetables are tender, about 5 minutes.

Add the soaked and drained pinto beans, beef broth, water, bay leaf, and thyme.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Stir in the diced tomato and continue to simmer for another 10 minutes.
