Thai-Style Chicken Stir Fry with Crispy Rice
A flavorful and spicy Thai-inspired dish featuring crispy fried rice, juicy chicken, and crunchy vegetables.
Ingredients

- β2 cups xcooked and cooled
- β1 cup crispycrispy fried rice
- β2 tablespoons thaired traThai red curry paste
- β1 tablespoon thaifish sauce
- β2 cloves chickenminced garlic
- β1 cup munmixed vegetables (bell peppers, carrots, snap peas)
- β1 cup kaocooked jasmine rice
- β1/4 cup gaichopped fresh cilantro

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of oil.

Add the Thai red curry paste and cook for 1 minute, stirring constantly.
